Although I've had some luck w/ 1g & 2g nanos, 5g seems to be the point where you start to get a little help from the water itself in terms of keeping things stable. You've got a little resistance to temp. swings, you've got appreciably more water than grravel etc. You've got less surface to clean per unit of water, and they really don't take up much more space than the 2/2.5g tanks do. 5g is also the right size if you want fish aside from the usual cramped Betta. Pygmie cories, small rasbora, neons... a few of any of these can work pretty well w/ some shrimp or snails in a 5g.
Even my shrimp seemed to appreciate moving from a 1g to a 5g as they started to breed lots once moved. There are also more plants you can keep in a 5g and screw-in CFLs fit in many 5g hoods.
