Its all personal taste. I know people that do each of the things you mentioned. If you have a limited amount of tanks, and you want to gain as much experience as you can with as many plants as possible, then people put as many different plants in the tank as possible. Nothing wrong with that. For a carefully designed plant tank, people usually stick with a small number of species.
