Good R/O water is almost too pure to measure accurately w/ a hobby grade pH kit. It will bounce around due to no buffers. Similar to the reason it is not recommended to use pure R/O in your fish tanks, but to add back some controlled minerals: reconstituting it.
The best tool to track your R/O water is a TDS meter (total dissolved solids.)
I purchased my unit from this company. They have some good FAQ, including TDS: http://www.buckeyefieldsupply.com/FAQ.asp#FAQ4
