First up, a fully carpeted lower section is not easy. You'll need a lot of light. How high is the 110g tank you have? If its more than 2ft high, it will be necessary to get PC or MH lighting.

Having said that, one of the easiest foreground plants to grow is the dwarf chain sword (Echin. tenellus). Some java moss tied to the driftwood would certainly complement the look.

As the fish you intend to keep are rather large, it would be very advantageous if you let the plants establish and grow before adding any of the fish.

It will be necessary to add a little CO2 and ferts to the tank. The amount necessary will be dependent on the lighting levels and amount of plants...

Side note: arent pacus herbivores?
