Yes, Turface MVP comes in gray.
I can't find it in my area, though, so can't give an opinion.

It use to come in a grey dark color. None was able to find it a while back in the USA.

While the color is an issue, heck, plant the region if you don't like bare gravel.
Works for me, I see a red gravel and I want to paint it green.

Is profile alone good enough, or should peat be added?

Add peat if you like. The way it blows around, though, I think you'll end up with tea water if the APS isn't mixed with heavier substrate material. Mulm from another tank is always a good idea.
