Let the flower stalks stay above the water. You can try pollinating the flowers with a paint brush by distributing the pollen from the stamens of one flower to the stigmas of another (I don't know if they self pollinate). Much easier than getting and germinating seeds is to wait for the little plantlets that develop from the internodes of the flower stem. When they get two or three leaves and some little roots, they can be removed and planted.
