How deep soil layer can I use for my 7 gallon walstad tank? Most sources recommend atleast 1 inch which is 2.5cm. Can I use 1.75cm?

I think you can go 1.75cm.

How long would the nutrients of the soil last? My livestock poop a lot so that produces some nutrients too. I want it to last around 2 years.I will also add in some root tabs to add trace elements. Would going with 1.75cm have any weaknesses compared to an inch? Thanks!

Don't add root tabs until you see nutrient deficiencies in the plants. Every tank is different so I can't say how long it will last.
