Hey, Inareverie85! It sounds like you've put quite a bit of thought into it. I can't wait to see what it looks like planted. The only question I can answer for you (and just partially at that) is the one about the moss. Everyone kept telling me how slow mosses grow, even in great conditions. Well, I have three different mosses (Christmas, Flame, and 'unidentified') and they all grow fast for me in moderate light and DIY CO2. I have a feeling that weeping moss will grow fast for you once it adjusts (after a couple weeks).
