The plant is usually sold in its emersed form. The submersed form looks the same although the leaves might be slightly smaller. Color-wise, it all depends on the nutrient management. Healthy ones grow a lush green.
I've grown a lot of H. callitrichoides. I find that it does best with CO2, good direct light (>2.5wpg), cool water, and lots of nutrients available to the roots.
