I have very high levels of phosphates out the tap, so I've not dosed that for a long while. Will that mean I'm going short on potassium? I have monopotassium phosphate but do not use.

This is my mixture for a litre bottle with distilled water.

59 grams K2SO4 (Potassium Sulfate)
65 grams KNO3 (Potassium Nitrate)
41 grams MgSO4 (Magnesium Sulfate)

Should I add more potassium sulphate perhaps?

Sounds like you have enough potassium from your normal dosing. If you aren't experiencing potassium deficiencies then there is no dire need to add more potassium. On the other hand, adding a little extra K2SO4 won't hurt anything since its very hard to overdose potassium.
