Can anyone advise on SAFE ferts to use with shrimp?

All aquatic plant fertilizers, used correctly, are safe to use with shrimp. It isn't the name of the fertilizer that affects shrimp, but extreme overdosing with any of them that does it.

What about the ones that have copper in them? I thought the shrimp are not tolerant with this?

As long as you don't overdose with ferts containing copper, you should be fine. 0.0001% of copper won't hurt them.
